Collard Greens
Ingredients:
Bunch, collard greens
3-4 slices of regular bacon or 2 thick
One large onion, sliced
1 Tablespoon olive oil
One teaspoon red chili flakes (or more to taste but not less)
1 Tablespoon white distilled vinegar or vinegar of your choice
1 - 14.5 oz can chicken stock or equivalent home made.
Pepper if needed
This is a fantastic dish. I wasn’t planning on adding it to the blog but after I made it, it was clear that it needed to be added. I have a lot of collard greens right now in the garden which is the reason that I made this. The first step is to render the bacon. Cut the bacon into small cubes and add to a cold pan with the olive oil. Head under medium head until rendered. About 5 to 7 minutes. Add the onion and cook until soft. Take the collard greens and wash them thoroughly. Remove the stems and roll and slice. Wash again and rinse in a salad spinner . Add to the pan and fry until soft. Add the vinegar and crushed chilies. Add the chili flakes and chicken stock, Taste and adjust as needed. Cook for 45 minutes. You can reduce the head and keep until needed. You need to make this, it is far better than you would expect.
