Cream of Mushroom Soup

Ingredients

1 lb Mushrooms - roughly chopped
3 cups chicken broth
1 1/2 tablespoons flour
1 1/2 tablespoons butter
Thyme to taste
1 Medium shallot - medium dice
1/2 cup heavy cream (more or less to taste)
1 teaspoon salt (to taste)
1/2 teaspoon black pepper to taste.

This is an easy soup to make and is a good way to use up mushrooms. Start by washing and chopping the mushrooms. Sautee them in a pan with the butter. Once all of the water has been released and evaporated they will start to brown. Cook until lightly browed and set aside. Sautee the shallots until soft and but not brown. Add mushrooms back to the pan along with the flour. Add more butter if the mixture appears dry. Cook for 3 minutes then slowly add the chicken broth while stirring. Add the cream, thyme, salt and pepper. Allow to cool and puree either in a food processor or with an emersion blender.

Heat when ready to serve.
