Fettuccine Alfredo with Mushrooms

Ingredients:
1 1/2 Cups Cream
2 Tablespoons Butter
2 oz shredded parmesan cheese
1/4 cup Pasta Water
8 oz mushrooms with oil or butter to fry
knob of butter
fettuccini Pasta, fresh or dried, cooked
Salt and Pepper to taset

Clean and slice the mushrooms. Cook in butter or oil with salt and pepper according to your taste. Once golden set aside. Take 1 cup of the cream with 2 Tablespoons of butter, bring to the boil and reduce by 1/3. Add remaining 1/2 cup of cream and add Parmesan and stir. Cook the fettuccine according to manufacturers directions. Drain and add to the cream - parmesan mix along with 1/4 cup of the pasta water. Stir and apply heat until smooth. Add 2/3 of mushrooms and mix. Plate and top with remaining mushrooms and additional cheese as desired. You can also substitute mushrooms for grilled chicken or other ingredients that you like. This is a super easy mid week meal and it really tastes like it is for a special occasion. Serve with a salad and garlic bread if you have time.
