Short crust pastry is very easy to make as long as you give it the resting time that is needed. This recipe uses a food processor.
Ingredients:
250 g All Purpose flour
125 g unsalted butter (you can use salted and just add less salt)
1 tsp salt
i egg yolk
3 tablespoons water
Add the salt and flour to a food processor and pulse to mix. Cut the butter into small pieces and add to the food processor and pulse until the mixture looks like breadcrumbs. Mix the egg yolk and water and add to the food processor and pulse until combined. Then run the food processor until a dough forms and combines into a ball. This should take 15 to 20 seconds. Stop as soon as the ball forms and remove from the food processor and form into a ball. Wrap with plastic and place in a refrigerator to rest. The resting step is essential for good results.
