Cheese Tarts
Ingredients:
1 quantity short crust pastry Link
2/3 cup cream
1 egg
dash of worcestershire sauce
dash of Tabasco or other host sauce
cheese - small dice (Sharp Cheddar, swiss etc.)
These tarts are excellent for appetizers. Makes 24 tarts.
Heat oven to 425F.
Roll out the pastry. To do this I bang the pastry first with the rolling pin, this helps to loosen it up and makes rolling easier. Cut out circles sized for a mini muffin pan. Spray with cooking spray and gently press the circles into each mold. Prick with a fork and then place in a freezer to harden.
Mix the cream, egg, tobasco and worcestershire together and set aside.
Take out the shells and add diced cheese to each pastry cup until filled. Pour in liquid and transfer to the oven. Bake on the bottom shelf. This allows the head from the bottom of the oven to ensure that the pastry is cooked.
Allow to cool and serve.
